Easy Peasy Zucchini Pie

1c chopped zucchini
1c diced tomatoes
1/2c diced onions
1/3c grated parmesan cheese
2/3c HeartSmart Bisquick
3/4c skim milk
2 eggs
Preheat oven to 400 degrees
Lightly spray 9" pie plate
Sprinkle chopped (cooked or raw) veggies evenly over bottom of plate
Sprinkle parmesan cheese over veggies
Stir remaning ingredients with fork until well blended
Pour over veggies
Bake 35 mines (or when knife comes out clean)
Let cool 10 mins before serving
Serving size 6
