Leather's Really Low Point Chili
This makes a HUGE batch of chili. I always end up freezing half of it for later which works great.
If you leave out the chicken, use veggie boullion, then it is even vegan. AND fewer points with no chicken!!!!

Ingredients
7 cube(s) chicken or vegetable broth or bouillon, dry
1 large onion(s)
2 cup(s) spinach leaves or use one package frozen
15 oz canned stewed tomatoes
30 oz canned tomato sauce
1 package(s) frozen mixed vegetables
6 cup(s) water
1/2 pound(s) dry pinto beans (four cups of cooked beans)
1 cup(s) cooked brown rice
2 1/2 oz Durkee Chili Seasoning Dry Mix
Instructions
CHOP AND SAUTEE ONION AND BELL PEPPERS IN COOKING SPRAY IN LARGE STOCK POT.
ADD RICE, TOMATO SAUCE, STEWED TOMATOES, CHICKEN BOUILLON, WATER, BEANS AND CHILI SEASONING. COOK UNTIL BEANS ARE TENDER.
ADD FROZEN VEGETABLES AND CHOPPED SPINACH AND COOK 10 MINUTES MORE.
ADD HOT PEPPER FLAKES OR HOT SAUCE.
