Spinach Parmesean Egg Cups

Ingredients:
1/2 cup drained frozen spinach or finely sliced fresh spinach
1 cup Eggbeaters
1/2 cup stewed tomatoes or chopped fresh tomatoes
3 Morningstar Farms sausage links chopped
12 tsp Shredded parmesean cheese
Salt, pepper, pepper flakes
Hot sauce
Spray non stick tin with pam.
Put half link of chopped sausage, a few tomatoes and approximately one tbs. of spinanch in bottom of each cup. (If using frozen spinach make sure it is well drained by squeezing the water out before using)
Fill each muffin cup nearly to the top with eggbeaters, approximately 1/3 to 1/2 cup each.
Sprinkle two tsp of shredded parmesean on top of each of six cups.
Bake at 350 degrees until hugely puffed up 30-40 minutes! Each will deflate as it cools. Store cooled in containers in fridge. Add hot sauce when serving. Nice warmed in microwave.

Makes 6 egg cups. I always eat two for a serving for only 142 calories!
