O.M.G. Veggie 'N Eggs Stew

Ingredients:
4 cups any kind of cooked beans
1 cup cooked brown rice
4 cups tomato sauce
2 cups stewed tomatoes
3 cups frozen mixed veggies
1 package frozen spinach
7-8 cubes or tsp veggie bullion
1-2 cups water depending on desired thickness
Cook away gently tell all ingredients are melding flavors together...about 30 minutes should do it since everything is cooked already.
When simmering, make indentations all over the top, making sure they are spaced apart.
Break an egg into each indentation and continue simmering, covered with lid, until whites are well set.
Take entire pan to table and ladle each person serving into bowl with egg staying on top.
Makes ten one cup servings. VERY filling.
Approx 260 calories per cup including egg. Tons of protein.
Serve with cornbread with a can or corn added in and some chopped jalepenos for company.
To make it prettier, put the hot stew in a casserole, make the indentations and put eggs in and put under broiler til eggs are done, or in over til eggs are cooked.
