Marvelous Minestrone Soup

Here is my fave soup... its super healthy and I can feel the lbs melting off when I have it. Its vegan but am thinking of adding shredded chicken next week. And its really good with some cheese sprinkled on top.

Preparation Time: 10 minutes
Cooking Time: 35 minutes
4 cups vegetable broth
1 chopped onion
1 chopped celery stalk
1 14.5-ounce can Italian style stewed tomatoes
1/2 cup uncooked small pasta
1 15-ounce can kidney beans, drained and rinsed
1 15-ounce can cannellini beans, drained and rinsed
1 16-ounce package frozen Italian style mixed vegetables
2 teaspoons parsley flakes
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon marjoram
fresh ground pepper to taste
Place onion and celery in a large pot with 1/4 cup of the vegetable broth. Cook, stirring occasionally for 5 minutes. Add remaining ingredients. Bring to a boil, reduce heat, cover and simmer for 30 minutes.
