Curry Tofu

Curry Tofu from Veganomicon by Moskoetz & Romero
1 pound extra firm tofu, pressed and sliced into 8 equal pieces **To press tofu, take it out of the container, gently squeeze out the liquid, wrap up in paper towel and place under something heavy like a cast iron pan with cans on top. Let press for 10 to 15 minutes**
For the marinade :
½ cup vegetable broth
3 TBS rice vinegar
2 TBS olive oil
¼ cup curry powder **use a scant less than ¼ c as this has a tendancy to be a bit gritty**
1 tsp cumin seeds
In a large mixing bowl, combine all marinade ingredients and wisk together.
Preheat the oven to 400 degrees F.
Cut the tofu widthwise into eight equal pieces. Marinate for an hour, flipping after 30 minutes (or overnight if you are organized…)
Place the tofu on a baking sheet and bake for 20 minutes. Flip over and bake for another 10 minutes. Place in the broiler for about 3 minutes for extra chewiness.
¼ c curry powder is a lot of curry. Indian groceries and co-ops have large amounts/bulk curry powder. I recommend three brands: McKormick, Frontier (co-op), and Penzy’s.
